Default Stumbling problem

Well my Z just got back from the transmission shop. It ran great and everything was going smooth until the other day. It seems like its only happening in 5th gear but when im holding 5th at like 2000 or 2100rpm sometimes it will just randomly start cutting out and bucking like crazy, and all the while the tach is going nuts....then I downshift and its fine, but the tach takes a couple of miles to go back to normal operation. I checked all electrical connections I could see on the top. I wonder what it could be? Is there something that gets disconnected when the tranny comes out that maybe shorted out or not all the way connected? Anybody with any ideas?
P.S.-the only code being thrown is the IAT- mass air input too high....I have had that one ever since I switched my elbow to a vortech and i guess I screwed up my sensor when i put it in...but it ran fine with that code being thrown.
