I dont see why it would. Fuel injection is far superior by design. The fact you can use better flowing intakes might cause it to be a little faster, but fuel injection itself will be faster. Just look at fuel ecconomy. You can get 27mpg with a 350 LT1, about 15mpg with a carbed LT1, and 30mpg with a 350 LS1. The most powerful engine is FI and gets the best gas mileage. This is becuase the air and fuel are dilivered the most efficiently.
The dual plane intakes readily available for the carbed LT1 intake swap are dual plane and will boost torque at the expense of HP.
I know the ignorant like to swear a carb is better but with injection you get much more detailed and accurate control over both fuel AND spark as well as not having to make TB size compromises to get drivability like you would with a carb. The injection also compensates for weather and altitude. As mentioned already the milage of injection is far superior too.
