Default Fresh motor problems starting. Help!!

Me and a buddy of mine finished installing a fresh mild 355 in to his Z. The motor fired up after a while of trying to start it. But wouldnt crank back up. The only problem we see is that the oil pressure is reading (stock gauge) zero pressure. After about 2 straight minutes of turning it over the oil pressure jumps 80+ psi then the car will crank. As long as you dont turn the car it will stay running. But if you turn it off you have to start all over again trying to get it to crank. We cant figure out why it does this.
