The car will start and turn over but once it actually starts to run, it'll only last a second or so. We've eliminated several other problems. I have a spare key. I'm going to try that the next time I can get to the car.

That wont be VATS. If your VATS is broken, you will turn the key and the starter solenoid wont engage, therefore nothing will happen. I would check your fuel and spark.

I said we've eliminated several problems already. The spark is fine, there is adequate fuel pressure. Something is not letting the PCM continuously send fuel/keep the injectors activated, etc. That's why it dies immediately after startup. We just don't know yet since it could be any number of things.

No problem. Ever find any more out on this? Have you tried checking the voltage going to the fuel pump relay when its attempting to run?
