How to check coolant level with aftermarket overflow??

How to check coolant level with aftermarket overflow?? Guys I moved the battery to the rear and I have a Speed inc Overflow tank on my car. (It looks like the Jaz and Summit version). I have the top capped off and the bottom I have the valve open and a line running up tp the radiator cap.
Here is my newb question, how can I measure my coolant level now without the factory reservoir? And how can I add coolant now since I can not open this coolant reservoir to add coolant, I guess I can just open the 2 bleeder valves and add the coolant to the rad???
