I am going to guess you picked several out and tried to link us to the "compare" page. Well that wont work.

On header bolts there is no need for anything too fancy. Most "bolt loosening" problems are due to gasket compression. I use cheap bolts and check them frequently for a week or two after installation and have no problems. Fanciest bolt I would consider would be the ARP with the 5/16" 12-point head which might make wrench clearance a little eaier.

Yeah, I did try to link the compare page but I don't know why it did not work. All of the bolts that I linked to are ARP bolts. Everyone seems to use the Stainless Steel bolts.

Part #
ARP-400-1210 Header Fasteners, Bolts, External 12-Point, Stainless Steel, Natural, Set of 16, 3/8-16 in. $33.69

ARP-100-1112 Header Fasteners, Bolts, External Hex Head, Custom 450, Black Oxide, Set of 16, 3/8-16 in. Chromemoly $29.69

ARP-100-1111 Header Fasteners, Bolts, External Hex Head, Custom 450, Black Oxide, Set of 12, 3/8-16 in. Chromemoly $24.69

ARP-100-1109 Header Fasteners, Bolts, External Hex Head, Custom 450, Black Oxide, Set of 12, 3/8-16 in. Chromemoly $16.88

All of these bolts have an underhead length of 1.000 inches. I am guessing the $16 bolts will work just as well as the $33 bolts.

Like I said header bolts looening only happens because they loose torque when the gasket compresses. The right solution is frequent retightening if using a gasket that compresses. There are some that do not compress, but still good proceedure to check them frequently at first.
