Default Polishing gears?

I am in the middle of a rebuild, hoped to have it done this weekend. Thanks to half of the teeth missing on the input shaft that won't happen. I was thinking while i have it apart of polishing the gears, or having it done.
How is the polishing done? in a tumbler or by hand?
What is actully polished? is it just the parts of each gear that the slider moves on, or is all the gears? Because the gears seem like they are all always in constant contact not moving back and forth, I can't see the benifit of polishing the whole gear.
A side question on that matter, I read that a chiped gear tooth could cause that gear to pop out, I don't understand that either. If the gears are always meshed together why would this happen?
Thanks, Steve
