So the friction disc seems to be a much larger diameter than the actual pressure plate or flywheel's intended surface ?
Your Allen key bolts do look like a fix...but not quite sure where the true blame is here.
But absolutely that would cause the problem you were having.

well the hex head bolts clear the disc...but from this side of the internet that disc looks bigger diameter than the PP friction surface
To me, a red flag would have been when installing the clutch the 6 point bolts hit the disc...aside from the noise the clutch would not disengage until enough disc material "self clearance" against the bolt heads
Does the clutch now work with the alan head bolts??

Did you put the disc on the input shaft and see if it would slide easily? I checked the stock pressure plate bolts and they have a 13mm head on them and if I remember right the flywheel bolts have a 15mm head.

Clean really really really good and then a very thin film of grease.

Sucksess!! Cold as ***** but I got it put back together and checked everything, it looked good. So, I threw the exhaust and driveshaft back in and busted it off. Bam! We’ve got a working clutch. I moved a foot or so forward then backwards. I gotta clean the shop out and maybe I can go for a test drive.
