will I be able to keep my current flywheel (Sachs 1050), clutch and hydraulic tob (Ram)?
Since you have the parts in hand, mock it up and see if a stock type TOB has a proper depth to operate the clutch. If it's too short a TOB, there are shims and taller OEM TOBs. You may get lucky and just need to adapt your clutch line to the TOB and shim it a bit.
Sachs 1050 = short crank LS.
