Ls7 grabs anything i throw at it!!!!

On stock tires, it will take a 3100 launch with a very fast clutch release, so long as it gets no more throttle until the clutch pedal is all the way out. Same for a DR launch at 3500, but no higher.
So the LS7 is not track friendly. If you want to launch the car at 4K or more, start looking somewhere else.
I don't know a single C6Z06 owner that makes passes that likes this clutch. Quite a change from the view we had as stock C5Z owners talking about the LS6 clutch.

so what clutch setup do u recommend for street tires and street use BUT
5K+ launch with dr's on the strip for about 525 rwhp
also using a 2 step, at the strip and a 150- 200 shot

If the total max rwhp is 525, I'd take a look at the Cartek Level-7 clutch. Plenty of folks have used that one at your power level.
If instead you are writing 525 + 150-200 and you want to do a slip launch, then you have a requirement that will be hard to meet. I would engage owners with your specific requirement via a post to the Forced Induction board here and the CF.

I love my LS7 clutch. Simple bolt on installation although I opted for ARP fasteners instead of re-using the stock pieces.
