It reduces synchro wear and that means a lot on a severe downshift (like 6th to 3rd at 70mph). Most people just do a rev match though.

You will find people use it alot when road racing, or auto X.
double clutch:
your coming of a straight a 120 mph and you have a 50 mph turn ahead:
1)ease off the throttle, and ease on the brakes with your rightfoot so that 1/2 your foot is on the brake petal (left 1/2)
2)put the clutch in and the shifter to the neutrl gate
3)let the clutch out 1/2 way and rotate your foot and "blip the gas petal".
4)put the clutch all the way in and select the desired down gear.
5)let the clutch out all while keeping your foot on the brake.
if this is done properly, you will not feel a jerk, or ruff rpm change when ever you downshift. It will be very smooooth. It sounds complicated, but after practcing it forr mabe 30 mins with the car off, it gets easier. This is the safest and the easiest way to prevent wear on the tranny. ( if you do it properly)
when i am skipping more than one gear like 140 mph, hard on the brakes for a 40 mph turn, ill blip the throttle twice. one when the cltcuh is out and one when it is back in.

All this double clutching and rev matching talk was more prevalent in the days before syncros. Syncros are designed to help match the tranny speed to the engine speed. They currently make up for driver skill in new cars.
if your in 4th and you want to shift to third.. put the clutch in, put it in 3rd and then blip the gas to get the rev's up and then let out the clutch.(easyily) Its so you dont feel the big jerk.
heal and toe is the same thing just wiht different steps and you use the break
