Dammit, the whole plan is a no-go if you can't top it off with an Arby's night. Forget about diamond rings, . . they have ONION RINGS!! Oh, yea! 
I'm sure there wouldn't be a section on their website dedicated to custom scoreboard readings. Most likely have to call them up. Do some research. Rent "Anger Management" and check out how Jack Nicholson and Adam Sandler were able to do it.
