For the ones of cars driving on the highway, you can experiment - during the daylight a wide open f-stop (low number) probably won't get the entire car in focus, so if you have enough light you can raise the f-stop somewhere in the middle, 9.0-11.0 or something like that. If the pics are too dark or still blurry because of a slow shutter speed, raise the iso up from 100 to 200, check your pics, then goto 400 if you need to in order to get a faster shutter speed. The pics of my blue Z06 were mostly at iso 100, 1/30th to 1/80th shutter speed, f9.0.
Depending on your setup, the car you are in, and the road you are on, it might be hard to get crisp pics at 1/80th or slower, so you might try 1/125th as a starting point.
All that changes if you are stationary though....
This was shot stationary while panning, zoomed to 200mm, f5.6, 1/60th but I had to go to iso 640 (overcast/rainy day):

This was taken while driving (just holding the camera with one hand, not looking through the viewfinder or anything) at 1/125th, iso800, f5.6, 18mm:

On this one, I got lucky with a steady 1/8 shot, iso 100, f9.0
