To get some realistic color changes specially for black or white, you need to be pretty familiar with curves and levels. First you need it in LAB color mode, makes it a bit easier. Then you need to work with and get really familiar with levels and curves. I been practicing on random car pics every once in a while I can get nice color changes but black and white still looks kinda funny
