Beautiful '68 you got there....
Here's my '68 - my interiors are NOWHERE as nice as yours - I'm still working on mine - I'm going for a pro-street interior - Autometer gauges, bucket seats, harnesses, maybe a cage, etc.
And here's my newest addition - to stay in the thread - 2001 Z28, Black. Normally rolls on 17" Z06 wheels, but this was when I test fitted the GS Wheels off my '88 C4 which has a 427 Bowtie with a procharger on it. The Z28 is stock motor LS1 except for a K&N intake and the exhaust removed in these pictures - I have since put back a stock exhaust for street use, but it is to be replaced soon with a borla.
These pics were as soon as I bought the car and test fitted the 11" rears. Soon to come - Strano 1.2" Lowering Springs, 17x9.5 17x11 CCW Classics, Borla exhaust - Car already has Koni adjustables.

yeah we went for a resto-mod-ish style. its got the original seat frames but everything else is new. frame off resto, 383 stroker, muncie 4spd, 12 bolt, 3.73's, 2" drop in front 1"-ish drop in the rear, still got the leafs and drums out back though. is your's lowered? looks to sit up a little more than mine.

Mine has a 30 over 400SBC with a mild lunati cam in it - its not a super strong motor though - sad thing that it still has the 3 speed auto behind it - not for long though - I was thinking of either converting to a 200R4, a muncie 4speed or if I want to go crazy, a T56 - obviously, the 200R4 would be the easiest, but what would it be if it wasn't a challenge?
My new seats just got here today - I got some Black SCAT Procar seats - should look good in there for the look I'm going for - and if it ends up not looking so sharp, they are cheap enough to take out and fit in something else.
Have you re-done your seatbelts or did you stick with the stock waist belts? I'm thinking of going for the Morris 3 point belt conversion for safety and ease of use.
