Default Installing a manual switch before fan relay

My car is built for road racing and I have a high capacity cooling system. My problem is driving the car when it's really cold out, car never reaches operating temperature. My fan kicks on at around 120F and I would like to bypass the signal to the relay by means of a manual switch inside the car.

What would be a good way to accomplish this?
What GA wire should I use?
How many amps for the switch?

There are 2 cooling fan fuses, a 10A to power the 3 relays, and 40A to supply the motors.

I would put the switch on the orange wire coming off the 10A fuse. Actually, I wouldn't bypass the fans at all. I would forget to turn it back on.

My setup is very custom. LS2 402 Stroker in a Mazda RX7 and my whole cooling system is custom. So my question is what would be the best way to keep that huge fan from turning on. Sorry for not mentioning my setup before.

Same deal. Put the switch on the wire that runs between the fuse and the low amp side of the relay.
