Go with 2.73 gearing, a lot of classic cars that see lots of highway use (or aren't stomped on too much anymore) have these low ratios swapped in for DD practicality. I have 3.23s in my little 3 speed and if MPG was seriously a concern/goal I'd go lower ratio. Not as much fun off the line, but you wanted MPG, not neck snapping torque..

In the munstang you can do that easy.
It would be tough in a auto fbody. But in a manual I dont see it being an issue.
As stated above, I would go with a 2.73... id also put a lot of effort into getting a very light weight wheels and package (something like the c4 y2k's). Id go with 245's or 245/275's. Anything you can save off rotational mass will be huge.
Then id talk to my tuner and have him lean out areas of my tune. IE if you do 65/75 for a 20-30 minute communte, have him ride with you and see if he can save you some gas in that area.
Let me know what you are able to do, I get 28mpg on the freeway in my turbo camaro.

I can't stand the "If you wanted fuel economy, you shoulda bought something else" mentality. There is literally no point to that line of thought. Why would you NOT want to improve something with no negative tradeoffs if you could?

My idea would be to wait for the new LT1 or 5.3 and 7 speed manual trans should get 30 easily. Its only a couple years away that they will do the 7 speed in a regular non corvette style chassis.
The other thing is to destroke a 5.3 block and build a long rod 4.6 with stock ls6 cam in your combo.

Just wait a few years and the prices will go down, used parts will surface and the aftermarket will catch up.
