5.3 SES light on / Tuner question

5.3 SES light on / Tuner question hey guys,
this is my first post and im new to this so please bare with me!
I have a 2002 chevy avalanche with the 5.3 liter I just bought. Truck has cold air intake, Tbody spacer and magnaflow exaust. But the previous owner decided to gut the stock Catalytic converters out. Now now the SES light is on saying emissions blah blah blah.
My question is, Can I buy a "Chip" of some sort to override that SES light? Or do I have to go buy new Cats? Im only getting about 11mpg and it seems underpowerd compared to a stock one. Im sure this is robbing power!! Id rather leave the cats off (Im in Florida, no inspections) but if theres no way to fix this ill do what I have to do.
I would love to have a more agressive tune installed for power and fuel econonmy . Is there one you guys could reccomend thats fairly basic yet allow me to kill the o2 sensor stuff?
