2000 Camaro SS M6, ESTIMATED GAS MILEAGE
My Camaro is my daily driver but man I'm only getting 160miles per tank is that average for a daily driven camaro mostly in city? I'd open up its lungs by throwing on a SLP Catback exhaust, SLP LID w/K&N, and Smooth Bellow, MSD wires w/ iridium plugs.
what else can I do to increase my gas mileage other than long tubes headers which I already got in my garage ready to go. Should I also change my fuel filter?(current mileage 101K)

That sounds way off, my 2000 TA WS M6 gets about 22-24 mpg with about 50/50 city-highway driving. My only mods are a lid and cat back exhaust.

I would change the fuel filter, throw in a set of NGK TR6 plugs gap them at .035. The air lid and filter will also help out in the MPG department. Also a custom tune will go a long ways.
If you are getting only 160 miles per tank you would have to be full throttle everywhere.

When my car was brand new, I don't recall ever averaging more than 15-16MPG in all stoplight city traffic, but I was able to average 30-31MPG on long roadtrips. Now I'm lucky to get 10-11MPG in all city driving, haven't done a roadtrip with my current setup. Per tank isn't very accurate, how many miles are you logging vs how much fuel are you using to fill it back up?
You could try your basic tune-up options... plugs, air filter, fuel filter, o2 sensors, tire pressures, GM top end cleaner, MAF cleaner, miscalibrated speedo due to non-OEM tire diameter, etc. If you make changes to allow more air to go through the motor, then the O2 sensors will detect the additional air and add fuel to attempt to maintain the commanded fuel ratio.

Change the fuel filter, air filter, and PCV valve. Ensure your plug wires are in good shape and definitely replace the plugs and clean the MAF sensor.
My preference has been ACDelco fuel filter, ACDelco or Airaid air filter, '04 LS6 PCV conversion (in lieu of just the valve; do a search for more info), no real preference with wires (I personally have GMPP), and ACDelco or NGK iridium plugs.

When my manual car only had a cat-back exhaust, long-tube headers and upgraded air filter I could see 280 miles from a tank of gas tank if they were all highway miles. If it was mixed use I was lucky to hit the 200 mark.
Now with heads, cam, intake, full exhaust, 4.10 rear, etc. I haven't seen 200 miles on a tank in years, however my best case driving conditions would be 50% highway / 50% city.

Since I'm running a Slp lid w/ k&n I just decided to upgrade to a complete Slp flow pac that should help. I'll clean my MAF sensor tomorrow and will also throw in a new fuel filter(ac deco)

I have an 02 and do a 50/50 mix of highway and city, mostly in moderate traffic (or heavy, I live in the Seattle area so my idea of traffic might be different lol) and I can average more than 300 miles on a full tank.
Check your fuel filter and your fuel pressure, poor mileage could be a sign of a failing pump.

Yeah, I get 20 all day long combined, when it's all highway I get upwards of 28-29 MPG.
I usually get 200+ miles on a tank for Daily driving, and 300+ on highway only.
It really all depends on how heavy your right foot is.

1. Do a full tune up to ensure the car's running properly.
2. Run 100% pure 91-93 octane gas. (non-ethanol)
3. During normal driving, skip shift from 1st to 3rd & 3rd to 5th.
4. Stay under 3K rpm shifting during normal driving.
5. If the car has been aggressively tuned, get it retuned.
If you'll do those things, I'll bet your gas mileage will improve noticeably.

CLEAN THE MASS AIR FLOW SENSOR FIRST.
Other possible causes
Clogged exhaust, cats or baffle in muffler
Dragging brakes
Dirty air filter
Dieing O2 sensors(slow)
Exhaust or vacuum leak.
My car with a LS6, six speed, 3.42 gear will bump 30 mpg on the interstate running 70.
Will get 250-260 miles per tank with and easy right foot with mixed driving.

I stopped running K&N filters a while back because the oil coats with hot wires on the MAF. There is NO power to be had with a K&N filter, the only time it is worth having is it flows more air when dirty.
I have seen a few air filter dyno tests where a plain paper filter produces the same amount of power as the K&N until they get pretty dirty.
A buddy with a head/cam/fast car lost 50rwhp, had us scratching our heads,. Car was pretty lean...I suggested cleaning the MAF with alcohol and a q-tip(was descreened).....next pull it went right back to 462rwhp instead of 413 or whatever it was.
Cleaning your MAF should be maintenance just like fluids and filters.
ALSO
Make SURE that smooth bellows is on all the way between the MAF and throttle body.
