Running hot?
You probably don't have a P/S cooler so P/S fluid sludge in the coolant shouldn't be an issue. Hot engine exhaust gases getting into the coolant? The engine being way out of tune or air/fuel way off (air leaks, failed sensors) could contribute to a temperature rise. For such a large change I would think water pump/thermostat if the fans are working normally and there are no other blockages. Confirm that the coolant temperature sensor is working correctly (infra red gun). Can untension the drive belt and see how freely the water pump turns. I assume there are no external cooling leaks noted.

Overall, the temp you are seeing on the gauge is not normal, especially at cruising speed, so assuming the reading is correct (good idea to verify with IR gun as mentioned above) then you definitely have a cooling system issue.
