Default Junk yard build

Hello,
Got a free LS iron longblock , alum heads, with truck intake manifold,( earlier Tahoe i think).
Its been sitting on a stand for a few years, Im finally getting around to starting with this project.
I'm looking into making this v8 a super stand alone simple rat rod buggy/ off road beater. Haven't decided on transmissions yet. Building engine and trans before shell.

Cheap is key here. Questions:
best harness to start with ?
Which ecu?
drive by wire or cable TB?
Good RWD transmission options ?

Best harness - whats your budget ? you can make your own lots of info to do this your self or you can buy one they range from $250 to $600+
Which ecu- again whats your budget ? are you going to buy the software and do you the tuning your self or will you be paying someone there is stand alone kits like Holley terminator and megasquirt . you can also use the stock ecu it will work just fine after being unlocked and tuned
drive by wire or cable TB? - IMO i like DBC just that much less wiring and figuring out how to mount the pedal
Good RWD transmission options ? - TH400 or TH350 if you don't care about OD 4L80E if you want OD. i believe most standard GM transmissions will bolt up depends weather or not you can find a clutch and pressure plate ETC. to work ( i don't know a lot about putting a manual trans. behind a LS)
