80 psi is fine.

I only reach 70 psi on my car at WOT, may blip into 75 territory but I'm concentrating on the road more than my gauge. Regardless of the throttle amount, if you find you are at 80 psi AND at the mid to upper rpms, then don't worry about it. If this is at idle or trying to accelerate from low rpm, maybe a bit concerned.

A thicker oil will increase pressure and reduce flow. Just stick to what you normally use unless you do an oil analysis test on it and find you need to change or if you are finding you are burning significant amounts of oil ie 1 quart per 1000 miles.

you can never have to much oil pressure, my ls1 ran at about 45 psi, my small block dragcar idles at about 80psi....
