Stand alone questions.
Questions....
Should I just wire the pump to an in car switch for when I am ready to use it?
Should I get an in car Fuel pressure gauge to monitor it?
Are there any specific ways/materials etc. that it has to be mounted?

I have a mechanical gauge running right off the regulator and I have a electrical gauge inside the cab so I can monitor it there while I'm driving, and have a gauge under the hood to tune the fuel pressure with. I'm trying to figure out how to wire up a switch so I can use one fuel pressure gauge to monitor the engine and standalone pressure and then just switch between "signals" when I need to.

I always wire them up to the main arming switch so that its on regardless.

You have been given some great advice above. Arming the dedicated to the arming switch is the safest and best way. Our dedicated should have came with a relay and a wiring diagram. If you need the diagram again let me know.
I always put a fuel pressure safety switch on my dedicated installs. This way if the pump fails it kills the nitrous system. We have liquid filled shock resistant gauges in stock if you need one.
