Im new to nitrous I have been piecing a kit together and I got this gauge for my bottle but I have absolutely no idea what kind of fittings I need to put it on the bottle or if I should take the one piece completly off the bottle?

Thats the blowoff fitting so if the bottle were to ever get too much pressure (2500ish psi or more) it will release out that valve to prevent damage/failure. Dont remove it and better yet it should have a blowdown tube etc from there to the outside of the car wherever mounted.

Is there not another accessory port on that valve?

If there isn't any other poet on that bottle then the only thing you can do is get one of those manifolds like fbodyjunkie said. We do have them in a couple of different sizes if you need a different size.
