Default Optimal Air/Fuel on the jug...

Anyone dynoed and found the optimal air to fuel ratio while on the jug?

Depends on each setup. Optimally nitrous is the safest between 10.5:1 and 11.0:1. It's a little rich, but that's the most effective area. Leaner is faster, so pushing it to the 12:1 area is possible, but not unless you want to consider rebuilding an engine frequently. I currently run my setup closer to 11.0:1 and have had great results with it. Let your tuning help you fine tune it after that.

So 12:1 on the hose is cutting it close?

You can certainly run there if you want to. I run mine a little richer. Some people run them leaner. Just depends on how you are running it. How much are you guys spraying anyway?
