I always try to run mine around 1000 psi, that was also on my best ever run too, so I know the pressure was right. Not sure exactly why yours would be so much higher than mine. I see that you have a HyperTech, might be a tuning issue (I use HP Tuners). Maybe someone else will chime in.

So you guys are saying, if I spay my LS1 it should be 100 shot and I'll have to replace my clutch !!!!

donno about M6 mine is A4 sprayed 150 about 10 times no problems at all.

I'm having a 100 wet kit installed with a Walbro 340, fuel pressure switch, and a window switch. Tuning comes with the package (not sure what brand/type kit it's going to be, but, open for suggestions).

Could I go a little higher safely? ... say maybe a 100 wet shot with 125 or 150 pills? Any recommendations?

stay with the 100 for now, get used to driving it with the 100,your engine will probably survive the 150 but your weak link is gonna be your tranny, just keep that in mind, if you dont already have a shift kit put in it now's a good time to do it. Unfortunately our A4's are weak.
Whether you blow a ringland or your tranny make sure you got some emergency funds when stuff breaks.

that bottle pressure needs to be 875 plus or its gonna dump too much fuel

Depends on the jet size. I never use the recommended jets for any kit. They aren't ever right. If you spray at around 900psi and have the nitrous kit setup for that pressure you won't have a bottle pressure drop going down track. This is what the promod and badass bikes do.
