plus the amount of money needed to do this project CF top or not would be so much that another grand or so for the CF wouldnt matter much
this would take well over 100hrs of labor from start to finish

I think I've decided on the technique I would use.
It would be a fixed hardtop with a semi-hidden rollcage. This ties in perfectly with another project I wanted to do. The steel tubing would replace the A-pillar and the halo bar would replace the top of the winshielf frame. With no T-tops the upper side bars can be run much higher. In fact, the whole forward section of the cage can be tucked up high and be hidden. Not only would it look good, it would be safe to drive with no helmet. At least as safe as the regular steel structure. Of course it can have padding and then some fiberglass covers with headliner material over it to make it look nice.
I don't know if this technique would work or not, but what if I built the rollbars to the exact shape of the roof I want and then skin the whole roof with either sheetmetal or fiberglass?
I could fit a large window (lexan or some other material) into the center of the roof. It could either be fixed or designed to be removable and stowed behind the front seats.
Do you guys think this would work?

I think one thing could make this project really look great would be moving the windshield glass back towards the cockpit about 3 inches. It'd give the 4th gen more of that long front end feeling that the Viper and Corvette have.
Doing this wouldn't add much work to the job since you'd only have to lengthen the cowl part of the hood in addition to changes you'd already be making anyway. However, I'm not sure the door attachment points would still look good.
Whaddya think?

The notchbacks would look better if they had the GTA spoiler on instead of the bird. THey only made them in '88.
Here is a pic of one witht the GTA spoiler from EBay:
