No you shouldnt do this, your coolant will not have time to cool down in the radiator thus making you apt to run higher tempetures. If you want to run cooler get a Hypertech 160 stat. Mine works great

been running w/o one for almost 5 months, 100+ degree days and an iron block too. ;D works ok, but i'd love to drop the temp down to 160-180 though. this puts it a little over 210.

removing the t-stat is something ive done to a few old carbed motors, it would help them run cooler in hot climates, but i dont think an LS1 would benefit from it. i could be wrong though

Running without a tstat causes the engine to take longer to reach operating temperature. Metal wears more and faster at lower temperatures. The longer your engine takes to reach operating temperature, the more wear you will get. You should just throw in a 160* tstat.
