I've experienced a similar issue once, it was on an ac cobra kit car with a ford big block 460, the culprit was the exhaust heat, it was actually overheating the o2s causing them to read incorrectly

I'm not saying this is your issue but its something to look into

Also, make sure your not getting contaminants (oil or water) in the exhaust that could cause you issues
