its a personal preference..
its a differnt feel with the MAF than Speed Density...
personally I preder speed Density as the throttle response is crisper..the MAF has to see and measure the actual Air, which tens to make it feel spongy in comparison to Speed Density. but the MAF is more forgiving for fueling
with smaller cams...the MAF is not really an issue... the more overlap you get, the harder it is to get good fueling at lower rpms... monster cams do not like the MAF

If the VE table is tuned correctly and the MAF comes on around 3500-4000 RPMs the whole throttle response argument is non-existent. I can speak for my car, decent sized cam, ran a 85mm truck MAF originally, no issues tuning, throttle is responsive enough that I need to peddle it to have any fun. I now run a 100 mm LS3 MAF, still the same. Tune the VE correctly, tune the MAF, have your timing set right and it will run good.
If your engine is pumping enough air to max out the MAF's than by all means go SD, most of the cars on here can still use their MAF and it will not hinder their performance, daily driveability will actually be better with the GM hybrid VE/MAF system than pure SD.

on the LS1 its a blend below that 4000 rpm mark.. unless you set it to a lower or higher value...theres also a complete set of values that you can change to set when it goes into steady state for below that 4000 rpm threshold.... which means you get 100% MAF at various points below that as well..typically when you are cruising
and there is a difference in the feel...
on heavy vehicles its not as noticeable as a lighter weight vehicle

No that's not the case... It's easy to see the difference SD makes. Under the hood (if cable driven) flick the throttle cable with the MAF very quickly and see the car rev as the the throttle is closed. Do it in SD and it comes right up. It's readily apparent by ear, pedal feel, and in the data logs.
I like the VE/MAF blend very much myself, but the throttle IS snappier in SD, even with both portions tuned correctly.
