Looks like your running alot of motor, and depending on your cam you may have to run SD to gain driveability in all areas.
I'm about to convert my fathers C6Z06 to mafless due to the GM stage iii cam that has bucking that I can not cure in the 1800-2000rpm range due to the maf.

Maf
Pros: More precise in higher rpms. Easier to tune.
Cons: Can become dirty, and Failed Maf is not necessarily common but does happen
Speed Density
Pros: Easier to get engines started with big cams. Sensors do not gum up like a mafs do.
Cons: Not as precise in upper rpm but this does not mean the tune is off, just not as accurate as a properly working maf. Overall it is harder to tune through out the rpm range.
My nuts always swing toward Speed Density, it simplify the engine.

You might have to step up to a 100mm MAF with a 454, you would probably max out the Hz limit on the stock one. Why don't you do a blend tune like it's done from the factory?

its mostly personal preference and what your tuner is most comfortable with, they will both get you the same results.
for me most people with big cams i would suggest i give them a mafless tune, and for me i like SD better i feel it has better throttle response

IF you have a good tune MAF is always better. This is far superior to speed density unless you have a 9 second race only track car. Driving on street with speed density is just and excuse for a bad tune or a tuner who does not know what he is doing.

An SD tune that correctly models the engine (including injectors) will be immune to change of weather.
If you're going with a MAF, you still need get both the VE and MAF tables corrected.
Either way, idle tuning is still required.

HSV GTS cars came from the factory with SD tunes.
They ran perfectly with better drivability and throttle response than maf-tuned cars from the same stable.
A properly set up tune is important whether you choose to run SD or a Maf.
