HPT + Stock ECM + LC1 = GOOD?

Okay, I have been wondering one thing on my FI build which is almost complete; what do I need for 02's and why do I see a lot of cars with three 02's on them?
Right now, I have a stock 2001 Camaro ECM, I bought HPT PRO, Installed a LC1 Wideband with Innovate gauge (the sensor is 2.5 feet after the turbo on the 3.5” downpipe). I did not make any provisions for other 02’s but I have seen other builds on this site where there are 02’s on both headers AND after the turbo.
I have read up a little on the tuning and will be going speed density. From what I understand, with open looped speed density, I will only use my wideband LC1 to develop the tune and that is it, right?
