Default Speed Density Tune for Turbo motor?

Forgive me guys, I'm new to these cars. Wanting to do a Turbo 5.3 in my Buick Regal. Talked to a couple guys who recommended ditching the MAF and doing a Speed Density Tune. Is this the way to go? I really don't understand the whole VE table thing is why I'm gonna take it somewhere to have it tuned.

I'm used to my Stock Turbo Buick where I can't get rid of the MAF unless I go to a FAST XFI system or something. Can this be done with the stock PCM on the LSX cars?

TIA
