You may want to try look at the engine speed, intake air temp., coolant temp., spark advance. This is just to get you started.

really depends on what you're interested in...

good starting point would be
Throttle Position Sensor
O2 Bank 1 Sensor 1
O2 Bank 2 Sensor 2
LTRIM (or may be Long Term Fuel Trims) bank 1 and bank 2
Fuel Trim Cell
Engine Speed
Knock Retard

from this you can average the values of the LTRIMs (1 for bank 1 and 1 for bank2) over Fuel Trim Cells 4-19 and see how your base tune is (if positive value you're running lean and the car's richening it up, you want 0 or slightly negative)

O2 sensors are a good thing to look at when going WOT (TPS > about 4.1 volts), you average these and can see how rich or lean you are running (approximate) at WOT

Knock Retard is something you are always interested in

Engine Speed should be at your current speed (RPM)
Intake Air Temp should be whatever the temperature of the incoming air is (kinda useless to log unless you're trying to isolate a knock issue)
Coolant Temp is the temperature of your coolant... i don't see any programming or fan switch so you'll prolly be running warm even though you have a 160 thermo (i'd say 205-215)
Spark Advance varies, it'll be high during normal driving, and at WOT will peak out around 29-30

Really... for just seeing how the car is doing check the items i listed above and maybe add coolant temperature
As far as what else to log... depends on what the problem is...

for instance i remember when i looked at the speedo when i was at wot, and it said i was doing 49mph. Then i remember what gear ii was in. what the rpm was, and what the car is doing.. it is a second pair of eyes watching out for any problems that might present themselves.
