Which iphone app and obd2 wireless interface is the preferred setup? Elm327 wifi? Dash command?

I have an android (I know I know, not an iPhone like you asked), but I use an ELM 327 Bluetooth dongle that wroks great with the torque Pro app. I can scan and log all my channels in .1ms intervals.
