So that could be the issue with the car stalling out on you, especially if it's mostly occurring when you let off throttle.
The temp fix i have found for this is, turning up the idle to about 750 rpm. Assuming that the extra exhaust flow is keeping outside air from getting to the sensors. It has fixed my stalling and surging. I need to get exhaust soon

You would be better off unplugging the O2 sensors, reset the fuel trims and let it run in open loop until there is exhaust piping connected to the headers.
