So I also removed some fittings that reduced fuel line diameter and replaced the feed line with 3/8ths fuel line. Here is a video of fuel pressure now. Is this still too low?

normal is 58+/-1 psi.

I have the same corvette regulator setup on my 1992 chevy truck swap and my pressure is always at 58 psi and never drops anytime WOT or cruising. I am not saying this is your problem but i had my hose come loose in my tank on the pump and that caused me some fuel pressure problems. I used a fuel injector clamp on that hose 3 years ago and i have been fine since.
