What should I change?
What should I change? Here's what I am seeing from a scan..
Short Term FT = -7 to +14
Long Term FT = .8 to 10
Manifold Pressure = 3.2 to 10.4 (7.2 - 7.5 average)
Knock Retard gets up to 7 when accelerating at 1400 RPMs 20 - 30% throttle

Wow. 7° knock retard at 1,400 rpm and 20%-30% throttle?? You didn't log that run in 6th gear did you? 
Sounds like too much timing or not enough fuel, but you said that after the headers it was running pig rich. I do not understand the knock retard at part throttle.
