Engine/Code Diagnostics???

Engine/Code Diagnostics??? I think I may be just searching the forums for the wrong terms. 
What I'm after is Windows software on a laptop that I can plug into my car and see what it's doing, either in my driveway or while I run down the road. Sometimes I'll want to save the data, sometimes I'll just want see it and forget about it. I'll also want to see if it's got any trouble codes posting and things like that.
Also, I'm curious is the GM Service Manual covers the whole OBD system - what sensors exist, voltages, wiring, and all that for the OBS system.
