Default VE tables

Could altered VE tables cause a massive breakdown above 5000 rpm? I put my car on Thunder Racing's dyno the other day and it pulled well up to 5000 and then just totally started missing and dumping fuel out the exhaust. I've got two things to look at mechanically but was turning to the tuning side to evaluate possible causes.

Rumor has it that 5000 is controlled by the MAF sensor.

Yes, I think PE mode is 100% MAF sensor input.
