You must NOT rely on LS1_Edit (in its current incarnation) to fully change a PCM from one model to another.
LS1_Edit only works on portions of the memory inside the PCM - the data portions. It leaves the engine portions unchanged. Therefore, if you attempt to use LS1_Edit to flash a program in to a PCM for which it was not intended, you could cause problems - data table alignment mismatch.
For example, I just got my spare PCM for my '98. It's out of a '99 454ci truck. If I were to use LS1_Edit to program it (it won't, btw), LS1_Edit would only program the DATA portion, but not the ENGINE portion. The tables would be mismatched, and I would probably hose the PCM.
What needs to happen is that you use something like the SPS (Service Programming System, Ease Diagnostics at http://www.easesim.com sells it for $1800, dealerships have it as well) to COMPLETELY reprogram the PCM, including VIN and stock flash. That will get the engine and data tables matching. THEN, and only then, can you use LS1_Edit on it.
Ken (of LS1_Edit) has the SPS system, and can do this for a nominal fee (I believe <img src="gr_stretch.gif" border="0"> ). I'm sure there are others out there who have it as well.
So, be VERY careful when thinking like this. You could cause SERIOUS problems if you don't use the right tools.

do they need to generate a new VIN number for you? I would think that for insurance and registration purposes that this could be a problem.
