Which parameters do "tuners" play with for cam changes?
Is that where all the power lies? I'm a little miffed about where all this hidden power is in the tuning. I am way behind the curve on this tuning stuff. What am I missing?

WOT fueling you can use the PE vs RPM table
if you need to control fueling at idle (some big cam cars like it a little richer than stoich) you can set your TPS to enable WOT to 0 for the 0-1600 or so range - this will put you in PE mode at idle and disable learning. You can then use the PE vs RPM table to control fueling at idle.
Quite a bit of the part throttle tuning will be in the spark advance table - changing the values as well as the shape can have a marked impact on throttle response, etc. Fueling is pretty well handled by the MAF, and is dynamic, so changes aren't normally required (at part throttle). The timing tables are relatively static with respect to different engine combinations, so quite a bit of improvement can be done here.
I would tackle the car as three areas - idle, part throttle, wot. Once you have those down to your satisfaction you can focus on other more esoteric cases (cold startup, etc.)
