On only ONE of the three sensors inside the GMSMAF I found black stuff which rubbed right off, I was wondering what that could be.. It was almost like a carbon buildup of some sort. Also I believe I smelled a little gassy as well.

Spray the wires clean with some B&G intake cleaner. The wires probably dirty from an over lubed air filter.

Ya I understand K&N air filter oil can clog the MAF wires? I do not have first hand experience with it. I understand that Holley filters are MAF-wire safe.
Double check to make sure you have a good seal on your airbox!
