Some 160 degree 'stats are reputed to be much
higher in reality. But whether this is a fact
or not, I couldn't say. What I think you should
do is set your low speed fans to about 150F on,
140F off, and go for a drive whilst looking at
the ECT using the Predator real time diagnostics.
With the radiator well cooled the ECT should be
very stable and the value you see is the real
thermostat temp (as opposed to the "marketing
temperature").

Once you know this number (T), then set the fans

FAN1 ON T-10
FAN1 OFF T-15
FAN2 ON T+10
FAN2 OFF T+5

This way you will have the FAN1 maintaining a
rad temp that gives the 'stat some room to work,
and FAN2 is a backstop in case there's too much
heat output for FAN1 to keep up. You won't hear
FAN2 except right after some real hard driving.
FAN1 will come on when parked / idling but it's
not so loud.

My stock 'stat keeps everything at a steady 194F
with FAN1 at 185/180.

If you have 160 stat you would set all the fan on/off temps at something higher than 160, makes no sense to run the fans with the T-stat closed. The 160F is actually the temp that the T-stat just starts to open. I have the setings used by my old HPP3 written down, I'll look them up and post later but think they were in the 170's. With a 160 degree T-stat your engine temp will run in the 170-180 range once warmed up in warm weather.

If you set the fans this high, then the 'stat
is not in control of the coolant temp. What I am
saying is (presuming you got the colder 'stat
because you want to be that cold) find the true
temp setting and make sure you have a cold sink
that is below that temp.
