Default Engine Temp question

My car is a 06 A6 Corvette.

I installed a Mezeirre Electric water pump with a 160 thermostat. I wired the pump using a relay and get the "power on" signal from the Manual transmission solenoid fuse in the fuse box in the engine compartment.

Now, occassionally I will be cruising along and all of the sudden it says "TURNING AC OFF ENGINE TOO HOT" the engine temp gage reads 100 and the coolant temp display changes to XXX. Turning the heat on in the car and its luke warm air.

I used a blue point radiator fill kit to suck all the air from the system when I filled it so there is no air in the system.

Any ideas? Where is the coolant temp sensor located? does the car have one sensor for the gage and one for the ecm?

I have purchased a Snap on Solus scanner but wont have the 05 update until thursday. Which may or may not work on my 06 car.

My feeling is its anelectrical not mechanical problem.
