question about tuning
They could do many things, its all down to the shop.
personally I would invest the time in learning to tune yourself, then you can do it as often as you like for every mod you do.
I dont think anyone could give a reliastic list of what a certain dyno shop can do. Tweak IFR, getting the WOT fueling correct. You would need a few logs on the streeet to get the VE correct, which a shop probably wouldn't do.

one thing could be, blew your engine and say it was already like that.
Now, if you were to ask what a shop could do for the car you have, that might be different. They can bend a pushrod, spin a bearing, tune the VE table to match your mods, etc.
put your car on the dyno...floor it...keep floooring it....
all shops will say they will do different things, hell i bet if you call the same shop twice or more they will say different things as it will never be said the same twice.
a dyno tune, involves getting WOT fueling right for peak power and torque.
most shops also do street tune after dyno tune to make sure everything is ok daily driving... get fuel trims in line...and make sure no KR on the street going WOT.
