Tune for headers?

Tune for headers? Hey all. I have been fighting this one for years; literally. I have an 02 WS6 M6, 57k miles, with Pacesetter Long-tubes, ORY pipe, O2 sims, and LS1 Motorsport airlid. I just don't seem to be getting the MPG or performance that I recall having. The car always seems to have a slight delay in throttle response or the UMMFF that it had prior to removing the high-flo cats; just got tired of replacing them one after another.
Do I need to have the thing professionally tuned? Am I too rich? Too lean?
I mean really, I feed the thing Shell gas and synthetic oil. It's my baby and gets it only the best. What am I doing wrong?

I've been driving my car for months without a tune, and as you can tell from my signature, it isn't that slow either

Do you have an exhaust leak somewhere that is messing up the O2 sensor readings? Have you changed O2 sensors to see if it gets better gas mileage? Putting old O2's into the headers can get fouled up with the coating burning off the headers during break in.
Every car is different some don't need a tune as bad as others after mods. The PCM has a very good system to compensate for mods at part throttle but if car starts to get too far from the factory baseline tune it will add too much fuel at WOT and you will see the Black smoke and a loss of power. regardless the stock Fueling at WOT is a rich 11.4-11.7 AFR to begin with (you want around 12.8-13.0 in an NA car for optimum performance) so your leaving power on the table even if the car completely stock! Dyno tune or a good wideband and tuning software is the only real way to get everything dialed in.
