The tubs look great, what size non drag wheel and tyre combo fit in them? Eg. 20 x 12s.

I am not sure what size tire and wheel combo you would need to get a 20 x 12. We have a lot of customers running 18's with larger tires. A few running 19's. But, they have to do a lot of measuring to get the setup just right.

Ok cool. Should be able to run a 20 x 10 with a 295 tyre.

You should be able to fit a lot wider then that. I run a 285 on a 19X10 right now. Most people don't want to pay the $$ to do a correct offset rim tha actually fits our cars.

I have the 4 door version of the GTO which has slightly less room from standard. I do understand about correct offset, I used to work in wheels & tyres, but was after a ball park figure so I could work from there for wheel and tyre width.

After I get my cam installed and nitrous tune finished this is gonna be my next project, definitely looking forward to this. And what better way than to go this route!
