So if $$ are any issue go look at the 04 cause I would not expect the 05 to have any real rebates for a while.


Rear

LS2 powered GTO as seen at SEMA

The 05's get slightly larger, upgraded brakes. The LS2 from the C6. Revised rear facia with split dual exhaust. The exhaust itself is different from the engine back and has an even more muscular sound now (so i'm told). It has a slightly higher redline. No doubt most if not all of the quirks in the 04's have been ironed out. Hood scoops and hood scoop delete option for those who dislike them. And a few other things I cant think of off hand.

Oh, and buying in Jan or Feb, I'm not sure you'll be able to find exactly the colors you want for an '04 - may require a bit of searching. Also, I'm guessing w/ the deals you can get on an '04, you can have a faster car for the same $$$ w/ some mods as the '05 stock.
'04 brakes are fine for street driving - but would need an upgrade if you were going to do much autoX or road racing. If that, an ugly hood or silly 'symmetrical' exhaust outlets (not true dual anymore, BTW - pictures show a single 'crossover' resonator) matters - then get an '05.

The hood is for some a selling point and for others, luckly an option you can have deleted. (and get the 'plain' hood like 04's have)
