I would not cut the stock baffles out if using a stock cover

That was with my old engine that was loose as **** and moved a ton of gas
Agreed. I run mine on the rears of the holley valve covers. -12 bungs going to each can. We gather about 2-3 ounces of e85/condensation per side, per pass. I will be moving them to ether the front of the valley cover this winter. I notice about double the amount from 20 psi to 26-28 psi.

Thank you for the input guys, I drilled a hole at the front of the valve cover at the location in the first pic I posted.
I'm still running pump gas so excessive condensation build up doesn't concern me.
MM recommended a single -10AN for my application since I'm still utilizing the PCV system so I thought a -12AN would give me a little room to up the boost later and not have to redo the system.
I'm going to have my guy weld a cap over the factory breather hole in the back and I'll be all set.
I'm a little concerned that I don't have a baffle in there but I think I'll see how it does as I'd rather have flow at this point.

Well gents, I wrapped up the catch can revision.
So I remounted the can right behind the I/C to shorten up the hoses and plus I think it looks cleaner.
So I'm running -12AN from the front of the valve cover to the can and using stainless braided 3/8" hose from the can to the manifold to retain PCV function and located the clean air filter next to the coolant overflow fill neck.
We'll find out how good it works after the next trip to mexico. ; )
